Millionaire’s Shortbread, has the classic Scottish Shortbread base, followed by a layer of oozing sticky caramel and a then layer of chocolate. Kids should eat this completely naked and preferably in the bath.  Adults may like to eat it the same way – but that’s strictly between you and your guests!

If the memory of Christmas calories lingers too close for comfort, why not go for something much more sensible but, nonetheless, just as comforting in the winter weather.  Two (yes two) savoury breads to go with your bowl of steaming soup.

First bread, the Crusty Brown Cheddar and Bacon Mini Loaf. Not much explanation needed here, just tangy English Cheddar, bacon and a drizzled of olive oil.

Second, is a take on one of my favourite soups, the good old pea and ham soup.  This, is the Pea and Ham Muffin (spiked with just a hint sweet paprika).

So this Weekly Bake sees the return of an English Baker favourite, Cheddar and Bacon Bread.   Perfect warmed in the oven ready to dunk in your soup on a cold wintry evening or, for the desk-bound, this is a great lunch-box bread. By the way, kids love this too…

If that’s not enough comfort for you, how about a Malted Chocolate Fairy Cake or two?  Made with a large spoonful of Ovaltine, melted chocolate and full fat milk, and topped off with Maltesers – this is basically a bedtime drink.  Just add pyjamas and a fluffy blanket for ultimate relaxation…

Is it a tart? Is it a cake? No, it’s another Weekly Bake….

First on the list of Weekly Bakes this week is my version of the world famous (in England) Bakewell Tart.  In fact,  the Bakewell Tart is so well known in England that it’s town of origin, the Derbyshire town of Bakewell, has built up an entire tourist industry around this delicious pastry.  Originally eaten as a pudding, we now tend to eat this more with Afternoon Tea.  This little beauty is really a cross between an tart and a cake made with a layer of raspberry jam, frangipane and flaked almonds (I also add a few fresh raspberries to the jam layer), all encased in a sweet crust pastry.

As ever, this goes really well with a cup of tea, but why not have it as a dessert with a big blob of ice-cream, cream or (if you want to go really English) smothered in hot thick custard.

Second on the list, are Bacon and Cheddar Cheese Mini Loaves. These large crusty rolls are practically a meal in themselves made with a little wholemeal flour, bacon and Cheddar cheese. Best eaten warmed through in the oven, great for a Sunday night supper in autumn with a bowl of hot soup, add butter if you want, or dunk in a little olive oil if feeling a bit Mediterranean.
